Matt and Mara are the gold standard for the farming\/homesteading lifestyle, tending to their vines organically and so very throughfully. \u003c\/p\u003e\n\u003cp\u003eThe Wine\u003cbr\u003eVerdelho grapes were hand harvested on the 6th and 13th of August. They were whole-cluster pressed to stainless steel, where the juice was held and pumped over once daily for five days. Once native fermentation began, the juice was transferred to to a mixture of neutral oak barriques, pucheons and stainless stell, and allowed to ferment for two weeks until reaching dryness.
