A veil of the genus 'Saccharomyces Beticus' is enhanced, which gives the wine a greater reduction and sharper cut to the wine since it consumes more glycerol than the flor yeasts 'Montuliensis' most common in the area of Jerez.\u003cbr\u003eIt is an energetic and powerful \"vino de pasto\" with a marked floral veil character. In 2022 Raul sought denser extraction in line with a Georgian amber wine with short maceration. The wine was kept in the Jerezana butt under the most powerful veil of the winery for ten\u003cbr\u003emonths.\u003cbr\u003eManual harvest of Syrah from Pago Carrascal the third week of August 2022. The Syrah from this vineyard developed\u003cbr\u003ewith very loose clusters and very small berries. Once in the winery, the grapes were trodden on foot without destemming and the must was kept on skins for three weeks under a gentle extraction regime due to the unusual\u003cbr\u003eskin-to-pulp ratio of 50% due to the drought. The must was pressed with a vertical press and racked without racking into two 'Taransaud' barrels filled to the touch. Instead of leaving a void in the barrels for the development of the veil,\u003cbr\u003enatural development was allowed after the void created by the slight evaporation of the wine. In short, the wine was not refilled, thus allowing a gradual vacuum that conditioned the veil to develop systematically. The wine was kept in the barrel for ten months under a lighter veil than that of the Palomino. After both wines were aged under a veil, they were blended in tanks and 'La Femme d'Argent' was bottled with a light filtration of 5 microns.\u003cbr\u003e'La Femme d'Argent', although it is a claret, is the first vino de pasto tinto under flor to hit the market in Jerez. The veil of flor in red wines, as well as in white wines, develops toasted, nutty characters and dries out the first fruit.\u003cbr\u003eTherefore, when contemplating the possibility of developing a red wine with a veil, Raul needed a red variety thatwas meaty, sapid and spicy to complement the organoleptic development of the flor veil. Which is why he opted for Syrah at the same time as Palomino.\u003cbr\u003e'La Femme d'Argent' is an energetic claret, with a lot of tension and carrying a load of very powerful sugary notes like a classic 'fino'. Which are combined with bright red fruit, spices and black olives. After two weeks, the must is pressed and both clay pots are consolidated. One of the two clay pots is filled, and the rest of the must goes to a stainless still tank. The must that remain in the clay pot develops an ethereal and savory tone of cedar, dried roses and spices.
