In the last part of our four-episode deep dive, we’ll reach out to the Loire’s furthest reach at every point of the compass: the oyster brine & ageworthiness of melon de bourgogne in the west, facing the Atlantic; the peppery, light pineau d’aunis and austere, rhubarb-inflected chenin of the Loir tributary in the far north; the traditional pinot noir of Sancerre in the east, on the way to Paris; the often-forgotten volcanic gamays of the Auvergne to the distant south, where the river is born.
