Old Cuban: This ramped up Mojito is another modern classic created here in NYC. Bartender Audrey Saunders is to credit for this minty, sparkling cocktail.
How to make it:
6 whole mint leaves
1 ounce simple syrup
3/4 ounce lime juice
1 1/2 ounces aged rum
2 dashes Angostura bitters
2 ounces Champagne (method wine)
Combine all ingredients in shaker with ice. Shake well and strain into a chilled coup. Garnish with cherry (optional).
Pro tip: The sparkling matters - champagne method wines will make this a richer, more textured cocktail.
