SOIL: Clay-limestone
VITICULTURE: Organically farmed vineyards in Fixin.
VINIFICATION: Whole cluster vinification of seven days with semi-carbonic maceration. Vinification in stainless steel tank, no sulfur added.
AGING: Aged seven months in three different vessels: 86% stainless steel tank, 7% amphora, 7% fiberglass egg. One gram of sulfur added at the bottling (on a fruit day in the moon calendar)
