Terroir: The Gamay, located in Pommard, is rented and farmed by Catharina. The Pinot Noir is from purchased grapes in the Côte de Beaune.
Viticulture: Biodynamic, with lutte raisonnée for purchased grapes
Vinification: 100% whole cluster for the Gamay and 50% whole cluster for the Pinot Noir, vinified separately. Indigenous yeast fermentation in stainless steel tank. No sulfur added until after malo. Aged for 12 months in older oak barrels.
