The two halves were blended in\u003cbr\u003eSpring 2023 once dry and malolactic conversion was complete and was elaborated by one of\u003cbr\u003eBurgundy’s best crémant houses. The prise de mousse was done with a cultured house yeast and\u003cbr\u003ea house liqour, rather than with industrial yeast and grape concentrate (as is the method used\u003cbr\u003ein the vast majority of traditional method sparkling wines). The wine spent 18 months on its\u003cbr\u003elies from the secondary fermentation in bottle before being disgorged with no sulphites or\u003cbr\u003edosage (ie no added sugar at disgorgement).
