His primary objective with each cuvée is maximum respect and\u003cbr\u003etransparency for his terroir and culture, as well as for the customers who enjoy his wine.\u003cbr\u003eSupernova Negre is Ca’n Verdura’s flagship red wine produced from the red mantonegro grape,\u003cbr\u003eindigenous to the Binissalem region of Mallorca, grown in cal vermell soils consisting of red,\u003cbr\u003eiron-rich clays and limestone with small and medium-sized galets. Supernova red originates\u003cbr\u003efrom the best plots of old-vine mantonegro from goblet-trained vineyards planted in the 1950s\u003cbr\u003ein the surrounding villages of Binissalem, including the village of Santa Maria del Camí, which\u003cbr\u003eare considered the finest vineyards in the area due to its situation and type of cal vermell soils.\u003cbr\u003eSupernova Negre is a fragrant, Mediterranean red:\u003cbr\u003emedium-bodied, with notes of wild red berries,\u003cbr\u003ecitrus, fresh herbs, and exotic spices.\u003cbr\u003eVINIFICATION | After manual harvest in small\u003cbr\u003eboxes and manual sorting, alcoholic fermentation\u003cbr\u003eoccurs with native yeasts in temperature controlled\u003cbr\u003estainless steel tanks at 21-22°C and large, used French\u003cbr\u003efoudres, with a variable maceration between seven\u003cbr\u003eand 14 days; depending on the parcel\/vineyard. The\u003cbr\u003egrapes are gently pressed and the wine is left to rest\u003cbr\u003ein 500L used French barrels and 2000L, 3000L and\u003cbr\u003e5000L French foudres. No sulfites are added during\u003cbr\u003ethe alcoholic fermentation, only a small amount is\u003cbr\u003eadded once the malolactic fermentation has ended.\u003cbr\u003eThe wine is then aged eight months further in the\u003cbr\u003esame 500L French oak barrels and 2000L, 3000L and\u003cbr\u003e5000L French foudres.
