Grapes come from\u003cbr\u003ethe Cas Pastor, Cas Verd, Son Borrás, and Plà de Buc plots, planted at\u003cbr\u003e130 meters. This complex island white is medium bodied, with a profile of\u003cbr\u003ecitrus, chamomile, fresh herbs, fennel, and white fruit notes, which provide\u003cbr\u003egreat freshness. Wines are made with low intervention and minimal sulfur\u003cbr\u003eat bottling. Production is necessarily very limited, as every bottle in this\u003cbr\u003egarage winery is sold each vintage.\u003cbr\u003eVINIFICATION I After manual harvest in small boxes, the must is held at\u003cbr\u003ecold temperatures for four days to separate the gross lees naturally. 20%\u003cbr\u003eis then fermented with native yeasts in 500L French oak barrels, the rest in\u003cbr\u003estainless steel tanks.
