In Hungarian, it's hártya, a film; in Spanish and Portuguese, flor, a flower. The French call it a voile, veil.
After fermentation, if you leave your wine alone, and if the right conditions prevail (big if!), a protective layer of yeast will blossom between the air and the liquid, protect it from oxygen, slowly transmute its flavors into walnut and comte and olive brine.
That's your film, your flower, your veil.
If you leave your wine alone and this doesn't happen? Well, you've got vinegar.
This is an ancient enough practice that traditions in places as varied as Rueda, Jerez, Sardinia, and Tokaj all feature yeast strains that share a common ancestor. And it can happen other places, too: Provence, Oregon, Australia... A friend of mine in the Sierra Foothills found flor on his rosé one year and texted me a picture asking if he should keep it.
But like I said, the stakes are high, if it's the wrong kind of flor. You might as well dump it already.No wonder most modern wine regions consider it too much of a gamble. No wonder it only survives in a handful of places, and outside of that, among a handful of people crazy enough to try something that worked for thousands of years.
But what does it do, when it works? In [yeast no. 3], we'll taste wines that have been forever altered, and forever saved, by the yeast that bloomed and sealed them off from the world.
Can you taste place, or grape variety, through the veil? Can you time travel? We're about to find out.
