Savagnin (60%) and Chardonnay (40%) harvested mid-October and crushed directly into barrel without racking or settling. The vines were planted in 1958. The wine is vinified in a separate cellar more conducive to biological ageing. No SO2 is used during élevage to keep the yeast healthy. The barrels are never topped. After 84 months, the wine is racked off and bottled in traditional clavelin without fining or filtration. No SO2 was added.
Bottled in 620ml bottle.
