Recaredo's 'Terrers' Brut Nature: It's not Cava, it's Corpinnat đ
WHAT'S IN THE BOTTLE:
Biodynamic Xarel¡lo, Macabeu and Parellada, made sparkling via the Champagne method. While it might be tempting to call it Cava, this is so much more: from Sant SadurnĂ dâAnoia in the heart of Catalonia's Alt Penedès region, there's even more care put into this wine than many from Champagne.

It speaks to the estate's intensity that this "basic" cuvĂŠe is fermented and aged in oak, spending 5(+!) years on the lees. Disgorgement is at cellar temp, with no freezing of the bottles, and entirely by hand â all for the most natural expression of Catalan fruit.

Recaredo is one of less than a dozen top producers labeling with the newer designation of Corpinnat, rather than Cava DO; roughly translated to "heart of Penedès," it's a statement about their commitment to the highest quality farming and winemaking.
WHY WE DIG IT:
How fitting that we end the year celebrating an estate founded in 1924; for 100 years Recaredo has produced Spain's finest sparkling wine. Founded in the family cellar by Josep Mata Capellades and now entering its third generation, the family has pioneered techniques for longer aging, the use of oak, the production of bone dry bubbles and biodynamic farming â truly defining the potential of Spanish sparkling wine.

Impressive history aside, this is also a straight up excellent bottle of bubbles. It's incredibly mineral, reflecting the vineyards' location in the shadow of the calcerous Montserrat mountain range. It's dry but textured, with almost-honeyed yellow apple fruit.

It's about time to be enjoying our final bottles of bubbles this year 𼚠We're putting this in the NYE lineup next to our favorite grower Champagnes, and the year's exciting discoveries from Germany and Italy.
