From biodynamically–farmed Chenin Blanc grown on shale and clay soils around Soulaines-sur-Aubance, the grapes undergo whole-cluster pressing, spontaneous fermentation in used barrels and tanks, and are bottled unfined and unfiltered with very low sulfur. Pear, white peach and quince with lime blossom and chalky minerality—bright acid and subtle texture making it quietly compelling.
