• Puy-Notre-Dame: silty-sandy-clay soils over Turonian limestone, south and southwest-facing, 103m altitude.
• Montreuil-Bellay: clay-sand soil over Jurassic limestone, west and northwest-facing.
Viticulture: Organic
Vinification: Pressed with whole clusters, settled for 24 hours and racked, 21-day ambient yeast fermentation in stainless steel tanks between 19°C and 21°C, blocked malolactic conversion (blocked by SO2 and low temperature), aged for 6 months in stainless steel tanks, tangential flow filtration, 20-30 ppm SO2 added after pressing and adjusted after fermentation and before bottling if needed (60 ppm total, 20 ppm free), bottled April 2025.
