VINEYARD: The grapes for the Dunn Caberent Sauvignon Napa are sourced from five estate vineyards over 42 acres at 1,400+ feet in elevation, as well as some purchased fruit from valley floor vineyards. The vineyards and winery are located in the town of Angwin on Howell Mountain
SOIL: Volcanic
VINIFICATION: The grapes are hand harvested, de-stemmed and fermented in stainless steel tanks. Then transferred to barrel to undergo malolactic fermentation and aging. The wine is racked every 6 months. Sulphur levels are around 25 ppm.
AGING: 32 months in French oak barrels (100% new)
