95% Pinot Noir/5% Gamay. Normally, Tue Boeuf vinifies and bottles three separate estate Cheverny Rouge wines: Rouillon, Caillères and Gravotte. But the challenging 2021 vintage made that impossible, so what fruit they could harvest from these three sites was made into a more broadly named Cheverny Rouge. Typical of their reds, the fruit went as whole clusters into huge oak tanks for an open-top, semi-carbonic fermentation. After a gentle pressing, the wine was aged in demi-muids for about 8 months and then bottled unfiltered with only a touch of sulfur.
