- Viticulture: Organic (in conversion)
- Vinification: 100% whole cluster, 9-day ambient yeast fermentation with semi-carbonic maceration in concrete tanks with no SO2, 2 pump-overs per day. Aged 8 months in used barrels. No fining, no filtration. SO2 added after malolactic fermentation (approx. 25 ppm total at bottling).
