UBE Miraflores is 100% Palomino from five different plots in Miraflores Alta (3) and Miraflores Baja (2), one of the most celebrated pagos in Sanlucar facing west on three different type of Albariza soils: Lentejuelas, Lustrillo and Tosca Cerrada. Grapes were hand-harvested early September and pressed whole-cluster into old 1,000-1,250L Jerez botas for spontaneous fermentation without temperature control, where the wine completes aging for 8 months, including 4 months of biological aging under flor. Bottled on the early side in mid-May, this cuvee is meant to be ready to drink upon release (as a âyounger brotherâ to Las Vegas El Carrascal), but you shouldn't hesitate to tucked a few bottles away. - JPS
