From organically farmed gravel and clay around Saint-Loubès, Eden is a Merlot-led Bordeaux Supérieur with Cabernet Sauvignon and Cabernet Franc rounding out the blend. The fruit is picked for freshness and fermented spontaneously in concrete and stainless steel with gentle daily pump overs, then raised without new oak to keep the profile clean and vivid; bottling is unfined and unfiltered, with little to no sulfur added depending on lot. It’s supple and bright—plum and blackcurrant with violets, graphite, and a light cedar snap—carried by fine, chalk-lined tannins and a fresh, food-friendly finish.
