This organically farmed, chill-able red is mostly Cinsault with a touch of Carignan (about 85/15) from schist and clay-limestone sites around Espira-de-l’Agly and Vingrau. Fermentation is carbonic in concrete or sealed tanks for lift and aromatic purity, followed by roughly eight months on lees to round the tannins—yielding a juicy, low-tannin profile built for serving lightly chilled. Expect wild strawberry, raspberry, and blood-orange notes with floral lift, Mediterranean herbs, and a delicate peppery finish.
