Pedro Balda only produces 2,000 bottles from his cave in San Vicente de la Sonsierra, but he has been doing it for 15 years. He combines his wine production with his scientific research and publishing at the university and works with grape varieties in different regions of Spain, not only in Rioja. This is pure Tempranillo from La Canoca, one of the coolest and healthiest zones of San Vicente, where they work without herbicides or any other products. The uncrushed grapes fermented in a semi-carbonic maceration with indigenous yeasts, and the wine was transferred to 225-liter barrels for malolactic and 14 months of aging
