From a south-facing parcel in Nuits-Saint-Georges’ northern sector, Les Procès is a prime 1er Cru planted with massale selection Pinot Fin. The 2021 vintage reflects the domaine’s precision-farming and minimalist cellar approach. The vines are densely planted, farmed biodynamically, and pruned for low yields.
Grapes were entirely destemmed by hand—a hallmark of Charles Lachaux’s approach—and fermented with native yeasts in open-top wooden vats. Gentle infusion replaced pigeage, and the wine was raised in seasoned French oak (low-toast, 10–15% new) for approximately 12 months. No fining or filtration.
The resulting wine balances detail and depth: fine tannins, lifted red fruit, and a mineral-driven spine—hallmarks of both the lieu-dit and this domaine’s new-era precision.
