Organic. A blend of organically grown Carricante, Catarratto and Grecanico harvested from numerous small vineyards, high on the north face of Mt Etna during the month of September. The Carricante, comes from a young vineyard in Contrada Pietramarina, which has ancient, deep sandstone subsoils resulting in sapid, mineral undertones. This fruit was direct pressed and fermented in a chestnut barrel. The Catarratto and Grecanico comes from a vineyard in the unique contrada of Flascio on the NW side of Mt Etna, halfway between Randazzo and Bronte. This fascinating site is full of large rounded river stones from when the âFiume Flascioâ broke its banks many years ago. The resultant fruit is tropical in flavour with saline notes, very low pH and high acidity. These grapes were fermented in stainless steel to dryness. The two new wines were blended together after they had finished malolactic fermentation, and remained on light lees until bottling late March 2025. 20 ppm SO2 added at bottling.
