Crafted from 100% Pinot Noir sourced from the esteemed Romanée-Saint-Vivant Grand Cru vineyard, this wine embodies the meticulous biodynamic practices of Domaine Leroy. The grapes undergo hand harvesting and are transported in refrigerated trucks to the winery. Upon arrival, they are sorted by hand on two large sorting tables to ensure only the healthiest fruit is selected. Fermentation takes place in large wooden barrels without destemming or crushing, preserving native yeasts and minimizing oxidation. The wine undergoes slow fermentation with extended maceration, employing techniques such as "pigeage" (pushing down the cap) and "remontage" (pumping over the fermenting juice). After pressing, the wine is transferred to a first underground cave until the completion of malolactic fermentation. Subsequently, it is moved to a second, deeper, and cooler cellar where it remains until bottling.
