Vineyard: Pinot meunier from the single vineyard of Les Conardins planted in 1965 in the village of Moussy (massal selection).
Orientation: Southern exposure
Soil: Composed of chalk and flint
Viticulture: Practicing organic; manual harvest and stringent grape selection in search of perfectly ripe grapes.
Vinification: Direct press and selection of the first juices; cold settling for 12 to 24 hours without enzymes before alcoholic fermentation to extract more aromas, then the juice is put into barrels. Fermentation in barrels with frequent lees stirring and regular topping up. Partial malolactic fermentation.
Aging: 8 months oak aging, no fining just a light filtration then bottled with a natural cork and aged in the cellar until disgorgement (40 months minimum). 2g/l dosage; disgorgement December 2024
Notes
The historic plot of the estate! This cuvée has a balanced nose, with fruity aromas, brioche, and subtle woody notes. The palate is smooth and slightly creamy, with an acidity that evokes the siliceous nature of the terroir. The finish is warm and elegant.
