From west-facing granite and schist slopes above the Sèvre just inland from the Atlantic, this 20120 is 100% Melon de Bourgogne harvested from vines averaging ~25 years of age. The fruit is hand-picked and fermented with native yeasts in stainless steel, then aged 10 months on fine lees in tank (no oak) with regular bâtonnage to build texture. Bottling is done with a light sulfur adjustment (25 mg/L total) and no filtration. The 2020 is pure and mineral—pear and green apple with sea-shell salinity and crisp acidity—finishing long, nervy and ready to decant, especially with oysters.
