This single-parcel Blanc de Noirs comes from Les Maillerettes, a Paillard family vineyard planted to massale-selection Pinot Noir on Bouzy’s south-facing, chalk-rich mid-slope. The site’s thin topsoil over pure Campanian chalk produces naturally low yields and highly concentrated fruit. Grapes are hand-harvested and pressed in whole clusters, with native-yeast fermentation carried out partly in neutral barrels and partly in stainless steel. The wine undergoes full malolactic fermentation and is bottled for secondary fermentation with extended lees aging before finishing as a Brut with a low final dosage. It is produced as a terroir-specific, vintage-only cuvée in very limited quantities.
