At the very start of the harvest, the finest bunches of grapes are selected and laid
out on wooden racks in an attic. After several months—having lost 80% of their
moisture—the bunches shrivel and their sugars become highly concentrated. Following a very slow fermentation in tanks, this nectar is aged for 3 years in oak
barrels.
