Les Longeroies sits on stony, limestone-rich slopes at the northern end of Marsannay and is one of the appellation’s benchmark sites. Fruit was hand-harvested and fermented with native yeasts, using a portion of whole clusters and gentle pump overs to keep extraction finely tuned. Élevage ran in mostly used 228-L barrels to preserve transparency, with minimal sulfur at bottling and no fining or filtration.
