From the limestone–marl slopes at the northern end of Marsannay, ‘Clos du Roy’ is Pataille’s most statuesque village site, farmed organically with low yields and hand harvesting. Fermentation is spontaneous with a healthy share of whole clusters and gentle daily pump overs to favor perfume over extraction, followed by a long élevage in mostly used barrels and bottling without fining or filtration with minimal sulfur
