A blend of organically grown and hand harvested grapes on Mallorca - this vintage is 90% Callet & 10% Manto Negro macerated for 5-15 days with skins and 30% whole bunch. Aged on the lees for 6 months in stainless tanks and then 6 months in bottle before release. Bottled in March '22 - unfined, unfiltered, and only 7mg/L of SO2. Annual production is around 1,700 bottles in (1L) format. Label art is by Pere Miquel Botsmann (@p.butza).
