In 2020 and 2021, they only produced one Savagnin. The 2021 Savagnin Ouillé was produced with grapes from different lieux-dits on marl soils, and it fermented and aged in 228- and 500-liter oak vats for 18 months. It has lots of freshness and acidity and displays more precision and definition than the 2020 that I also had the chance to taste. It opens up with beautiful notes of peach and a saline touch, with the chalky feeling and a salty twist in the finish. In 2022, there will be more cuvées of Savagnin. There are 6,500 bottles of this.
