Terroir: Located in Les Echezeaux, a cooler site tucked away as the valley turns. Rocky soils with little clay, resulting in a floral and lifted expression.
Viticulture: Organic (in official conversion as of 2020), biodynamic methods
Vinification: No added SO2 during vinification or aging. 50-75% whole cluster, 2-week ambient yeast fermentation with alternating daily punch-downs and pump-overs. Aged for 15 months in barrels (0-30% new). SO2 added before bottling (25-40 ppm total).
