A one time bottling made to commemorate the birth of Luis Pato’s granddaughter Julia in 2021. 100% Sercialinho coming from 60+ year old vines grown on sandy soils at the Quinta do Ribeirinho. Exclusively free run juice starts its fermentation in stainless steel tank, but is paused by chilling down the wine to near freezing temperature. The wine is then transferred to the bottle where fermentation continues until the yeast is killed by the density of the carbonation, although with notable residual sugar. The wine then aged for almost 4 years on the lees before disgorgement. Imagine Champagne mixed with Spatlese Riesling.
