A blend of both the Heathcote and Harcourt fruit • The soils are made from the famous ‘Cambrian soils’—red dirt made up of eroded basalt over limestone, shot through with greenstone and jasper • Fermented with indigenous yeast, 60% whole bunches • Aged in mostly large, neutral oak (Stockinger) and concrete tank for 16 months • Rested for a further six months in steel tanks
