Direct press of whole clusters and selection of the first juices, cold maceration of the lees for 4-5 days before alcoholic fermentation to extract more aromas, then the juice is put into barrels. Fermentation in barrels, demi-muids and foudres. Eight months oak aging with partial malolactic fermentation. In 2019, wines were exposed to more oxygen by spacing out the ouillage and limiting batonage to obtain more and depth.
Aged under cork for minimum 40 months sur lattes plus 3 months in bottle after disgorgement, no fining and light filtration, disgorgement with dosage liqueur vinified in barrels, 3.5gr/l dosage. Disgorged February 2024
A pale pink color reminiscent of peach, Les Massales Rose is tangy and bright with notes of strawberry and blackcurren. A supple and silky rose Champagne with impressive delicacy on the palate. Wish there was more to go around!
