100% Sauvignon Blanc. Buisson Pouilleux is a 1.1-hectare vineyard of two parcels of Sauvignon, one planted in 1950 and the other in 1964; currently, half of the original old vines remain while the other half has gradually been replanted over the last 20-25 years. The clay-based soils are gravelly and rich in limestone and flint. The Puzelats farm all of their vines organically and harvest them by hand. Typical of Tue-Boeuf whites, the fruit is whole-cluster-pressed and allowed to ferment spontaneously with native yeasts and without sulfur in large oak tanks. The wine ages for around a year in used Burgundy barrels with no racking and with occasional stirring of the lees; it is bottled without fining or filtration and with a minute quantity of sulfur. From 2019 on, the wine is classified as Vin de France rather than as AOC Touraine.
