Sourced from very old, head-trained vines rooted in San Benito’s lime-rich, alluvial gravels, this Mataro is rendered in Sandlands’ low-oak, low-alcohol style. The fruit was hand-harvested and fermented with native yeasts in open-top tanks with gentle daily pump overs and a light touch of stem inclusion, then raised in neutral barrels and bottled unfined and unfiltered with minimal sulfur.
