Organic. 90% Nerello Mascalese and 10% Grecanico. The Nerello Mascalese was placed in a 30hl open fermenter for 36 hours, half was whole cluster and half was destemmed. The grapes were then pressed into a used 20hl oak cask for fermentation. The Grecanico was given 5 days of skin contact in steel and then added to the fermenting must. Upon completion of the alcoholic fermentation, the wine underwent malolactic fermentation. It was then racked clean to a stainless steel tank. It was bottled without fining or filtration in February 2024. 20 ppm SO2 added at bottling.
