Elena Penna is internationally known as the woman behind the global Derthona boom, this is how much she believes in this historically undermined varietal. The proud, sole white wine of the Cascina Penna-Currado project, this is a mineral-driven, saline expression of Timorasso made using a brief maceration of the skins during crushing and submerged cap fermentation (an unusual practice for Timorasso that Elena became keen on after visiting with a grower in Liguria). The wine takes on a richness and complexity but without oxidation. The vinification involves maceration with the skins during crush, followed by submerged cap fermentation producing a richness and complexity. It is aged in clay Clayver anfora.
