Grapes are hand‑harvested, with ~40 % whole clusters, followed by cold pre‑fermentation maceration. Native-yeast fermentation lasts around 15 days with gentle pigeage and remontage. Aged 18 months in French oak (25 % new), bottled unfined and unfiltered.
