Location: Santiuste de San Juan Bautista is a small village located in the D.O. Rueda, in the region of Castilla y León, in the province of Segovia, Spain. Varietal: 100% Verdejo
Vineyard: Grapes were sourced from four different high altitude sites around Santiuste de San Juan Bautista, ranging 800-900 meters. Soils are a mix of sand, gravel and slate. Prephylloxera bush-trained vines are 130-200 years old. Farming is organic.
Vinification: Grapes were hand harvested in late September, the grapes were partially de-stemmed and lightly macerated on the skins for a few hours. Subsequently, they were pressed in a vertical press and the must then underwent alcoholic fermentation with indigenous yeasts, 70% in stainless steel tank and 30% in 500 liter dolia (Spanish clay amphora). After fermentation the wine was left to rest on its fine lees for nine months (70% in stainless, 30% in dolia), and then bottled without fining or filtration. No sulfites were added at any point.
Tasting Note: Beautiful golden color. Jasmine flowers, waxy/honeyed orchard fruit, grapefruit pith, tonic, Meyer lemon, verbena, aniseed & salty crunchy herbal spice on the finish.

About the wine: Emeralda’s desire was to create a Pueblo (village) wine, combining grapes from 4 different Paraje sites (El Carrascal + La Fuentecilla + Vallejo + Vayuste) in Santiuste de San Juan Bautista.
