Age of Vines: 70 years
Soil Profile: Granitic. Organically farmed, and the younger vineyards have
been using controlled grassing since 2022. Most of the work is done
manually, and since 2023, the company has also been creating compost
from winemaking and pruning residues, along with manure from the
surrounding sheep grazing, which will provide organic matter and
strengthen the weaker plants.

VINIFICATION Harvest: Hand harvested early September
Elaboration: Spontaneous fermentation in 10 hL vats; partly destemmed,
part whole bunch. maceration for 7 – 10 days, soft pressing. Aged 10
months in 20 hL french oak barrels.
WINE Pure red cherry, ripe red strawberry, rhubarb, red plum with undertones of
macchia mediterranea like juniper, cypress, sea spray, sage, lavender and
thyme. Soft tannins and elegant finish.
