From the cool-climate slopes of Mount Macedon, this white is a blend of Marsanne and Roussanne planted between 2004-10 on rocky basalt and sandy loam soils. The fruit is harvested at modest ripeness, fermented partially skin-contact with native yeasts in a mix of stainless and older oak, and then aged 10 months on fine lees before bottling with minimal sulfur.
