Organic. 100% Pinot Noir, purchased from Phillipe Pacalet from his parcel La Croix Blanche, a climat situated towards the East of Pommard on a thick layer of topsoil over alluvial sediments, clays, and gravel. The parcel is known to be particularly well-draining.The fruit is fermented whole cluster and spontaneously fermented. It’s then pressed into barrel (½ used and ½ new) and aged for 18 months. Bottled unfined, unfiltered and without additional SO2.
