Organic. 66% Gamay, 33% Pinot Noir from a higher-altitude parcel in the Côtes-de-Couchois area of Burgundy that is east and south facing on early Jurassic Marl and Middle Jurassic Limestone. The fruit is carbonicly macerated for 20 days, before fermentation and aging for 9 months in old used oak barrels. Bottled unfined, unfiltered and without additional SO2.
