VINIFICATION Harvest: Manual harvest 
Elaboration: Spontaneous fermentation with indigenous yeasts activated
by pied de cuvee.  The grapes, expertly selected and harvested from the
various vineyards, are transported in the shortest possible time to the
cellar. Here the destemming and soft pressing begin, followed by pressing,
which takes place slowly and delicately. Bottling takes place
during fermentation. 
WINE Aromas of red and orange citrus with blood orange, tangerine, watermelon
and faint undertones of chamomile and wild lavender. Distinctly salty and
textural with a clean, refreshing petillant finish.
