Viticulture Farmed using organic and biodynamic practices
Vinification The lots were fermented using all native yeats and about 15% whole clusters in small 1 -1.5 ton lots for 12-20 days. All cap management is manual and no pumpovers are employed. The wines are pressed at dryness, settled and put to barrel for native, malolactic fermentation.
Aging Aged in neutral, French oak barrels for 10 months
