Malbec looms over perceptions of Argentinian wine – along with an overripe, overextracted profile. But Matías makes an astonishingly fresh version, working with fruit grown at 1,400m altitude and the same pH-seeking winemaking as the first two wines.
It’s the peak example of his “minimal movement” infusion style (again, 8 months of skin contact with 50% whole bunches): every time a wine is moved, the skins are disturbed and extracted. Simply letting the bunches settle and infuse over a long period of time builds intricate tannin structure and draws out nuanced fruit character. The result is a lifted style, full of the dark earth and fruit hallmarks of Malbec while remaining impossibly fresh.
