San Barnaba is the collaborative project of Roberto and Giovanni Pasquero with Francesco Rocca, son of Bruno Rocca. Their Freisa comes from high-altitude vineyards in Santo Stefano Belbo, where the variety thrives in cooler conditions. Fermentation is carried out with native yeasts in barrique, followed by élevage in large Slavonian oak to bring polish while maintaining the grape’s natural vibrancy. Bottling is done without fining or filtration, with only low levels of sulfur. The resulting wine is lifted and energetic, showing juicy red fruit and wild herb notes over fine-grained tannins, making for a vibrant and gastronomic take on this historic Langhe grape.
